one more dumb question

Why is it that your car always runs perfect till you need it? That was not the question though.
I just replaced my fuel sending unit in the tank. The filter was shredded. I had 2 fuel filters that are right before the fuel pump clog up pretty quick. I just put on a new Holly 750 and replaced the metal fuel filter I had right before the pump with a plastic see through on. I figured I could see how much stuff the filter was catching. I also have one of the glass see through filters right before the carb. My question is this. My car was running great. Now it is acting like it is trying to flood out. I popped the hood and don't see any fuel dribbling in the carb. What I do see is 2 almost empty fuel filters. Shouldn't they be at least 1/2 full with the motor running? I am starting to think maybe the filter in the tank is starting to clog up. I am starting to wish I put a fuel cell in this. I got this tank from another fury that was just wrecked. I sold my toyota and decided to make this my daily driver. I always ran great other than having to change fuel filters, up till now that is. The car idels real rough but once you drive off. It is ok. Runs ok under full throttle too. Any ideas before I go farther crazy? As I type here. I am thinking I should go out and fire the car up. Remove the plugs in the side of the carb where you andust the floats. See if I am to low or high fuel wise in the bowl. If you turn the car off now. I have to hit the gas to get her to fire up again.
