Starting a Rebuilt 383 for the first time..

Cooling System
I have read things about Dexcool anitfreeze that is swaying me away from adding this to my new rebuilt motor. Thoughts on this?

Adding distilled water to the block then fill up the radiator with either full strength or 50/50 mix coolant? Still unclear here.

Turning over the motor

I'm reading that priming the motor is the way to go before the initial attempt to starting it up. Can I just not have the dist cap off while turning the key? This should activate the oil pump, correct? Any other ideas?

2500 RPM's for 10 minutes is what I am told by my motor rebuild shop. Then 2000 and so on, does this sound right?

What else am I missing? Just want to be sure I am doing this right.
