I made a delivery to this winery, in the Napa Valley near Rutherford on Hwy 29, the other day.
At the not as pretty, but at the very modern steel warehouse where making wine happened,
as I drove up, a man using a forklift hoisted a wine cask onto a grate in a huge funnel like structure on top of a stainless steel tank,
rotated it so the cork faced down and removed it dumping the wine into the tank.
Incredulous, I asked if the wine was spoiled, and he said they were just removing the sediment.
Although I am light years from being a polymath, I am becoming well rounded, knowing a bit about a lot.
