Need help on what wiring harness to purchase…

The car is a 72 Dodge Demon 360/727 with a mopar electronic distributor and a Mallory HyFire 6AL ignition box and Promaster coil and an electric fan.

I got this car when I was younger and didn't know much about wiring so theres a lot of subpar wiring and routing from when I went from the /6 to the 360 and added the electronic ignition and some aftermarket gauges and it looks like crap. I want to replace the birds nest of an engine harness to clean up the engine bay a little bit and make it look more presentable.

I'd like to get an OEM replica harness from either Year One (139.00) which from what I've read is essentially plug and play or the Evan's wiring harness (105 for electronic ignition or 90 for points) which again I've heard is an easy install. Since I'm using a aftermarket ignition system, I would still have get the wiring harness for the electronic ignition correct? Which one is better? Does the evans kit come with the connectors as well?

I think for the most part I've ruled out the universal kits that other companies offer just for the sake of how much longer it would take to install. However, I do have an electric fan w/adjustable sending unit kit as well as 3 aftermarket gauges, cd player, and would also like to install relays for the headlights as well as any other accessories I might add in the future that I would like to some how integrate into one unit.

Ideally I'd like to replace the stock fuse box with something aftermarket or something I can find in a junkyard to get rid of the glass fuses and maybe have a spot for a couple of relays so if theres any kits or cars to look out for post them up please! But the dash wiring harness doesn't need to be touched at all, its in very excellent shape.

I'd also like to do something about the bulkhead connectors, specifically the engine bay side as mine are pretty ratty looking. Does the year one or evans kit come with these or no? Anywhere I can get new ones or does anybody have any ideas on what I can replace them with?
